Good morning and what a lovely morning it is too, it makes all the difference when the sun shines.

I thought I would start the week off with a little recipe that is so quick to make and so delicious to eat. They are quick florentines and believe me they live up to their name.

You need the following:-

6.5 ozs chocolate (milk, plain or white, your choice, I used milk)
2 ozs cornflakes
170g condensed milk
10.5 ozs mixed fruit and nuts ( I use a bought pack of fruit and nuts which makes it a very convenient bake but you can mix your own dried fruit and nuts using exactly what you want to put in. So long as you use the correct weight)

Line a 10 inch by 8 inch baking tray with baking paper. Melt the chocolate then cover the base of the tray with the melted chocolate and put in the fridge for about 15 minutes until the chocolate has set.

While the chocolate is in the fridge put the fruit and nuts into a bowl…..

…..then add the cornflakes.

Mix it all together using the condensed milk…..

….. and then put it in the tray on top of the set chocolate and bake it in the oven at 160 deg C for about 10 – 15 minutes until it is golden brown. Baking times will vary as ovens vary so please keep an eye on it as it does brown very quickly, in fact I think I nearly left mine too long this time so it worth while keeping a close check on it! When they are cool enough put them in the fridge to set the chocolate firm and then cut them into squares.

I made mine this weekend, needless to say there aren’t may left! They’re the sort of traybake that one just isn’t enough!
